    • 1 teaspoon salt
    • 1 teaspoon sugar

Instructions

  1. Grind all the ingredients for the spice paste into a fine paste using a food processor or mortar and pestle.
  2. Heat a pot over medium-high heat. Add the spice paste, lemongrass, kaffir lime leaves, turmeric leaves, and salam leaves. Stir-fry until fragrant, about 5 minutes.
  3. Add the chicken and stir well to coat with the spice paste.
  4. Slowly pour the coconut milk while stirring the chicken to prevent the milk from curdling.
  5. Reduce the heat to low and let the chicken simmer until the sauce has thickened and the chicken is tender, about 2-3 hours. Stir occasionally to prevent the chicken from sticking to the pot.
