- Blend soaked dried chillies until smooth. Set aside.
- Heat oil in a pot and saute onion, garlic, ginger, and lemongrass until fragrant.
- Add belacan and continue to saute until it's well mixed.
- Add chicken and cook until it's browned.
- Add blended chillies and tamarind mixture. Stir until everything is well mixed.
- Cover the pot and let it simmer for 30 minutes or until chicken is fully cooked.
- Serve with rice!
Asam Pedas Ikan Kerisi Kelantan
Now, onto the fish dish. Here's what you'll need:
- 1 lb of kerisi fish (or any firm-fleshed fish), cleaned and cut into steaks
- 1 tablespoon of tamarind paste
- 1 teaspoon of salt
- 1 teaspoon of sugar
- 2 tablespoons of oil
- 1 onion, sliced
- 3 cloves of garlic, minced
- 1 inch of ginger, chopped
- 2 stalks of lemongrass, smashed
- 10 dried chillies, soaked in warm water
- 1 tomato, quartered
- 2 cups of water
Now, here's how to make it:
- Mix tamarind paste, salt, and sugar in a bowl with 2 cups of water. Set aside.
- Blend soaked dried chillies until smooth. Set aside.
- Heat oil in a pot and saute onion, garlic, ginger, and lemongrass until fragrant.
- Add blended chillies, tomato, and fish. Cook until fish is browned on both sides.
- Add tamarind mixture and bring to a boil.
- Reduce heat and let it simmer for 10 minutes or until fish is fully cooked.
- Serve with rice!
