If you're not familiar with lontong basah, it's essentially compressed rice that's wrapped in banana leaves and boiled until it becomes a solid cake. When it's cooked, it's cut into small cubes and served with a rich, flavorful coconut-based gravy known as lodeh kuah.

Ingredients

  • 500 grams of Lontong (compressed rice)
  • 200 grams of Tempeh (soybean cake)
  • 200 grams of Tofu
  • 200 grams of bean sprouts (germinated mung beans)
  • 2-3 pieces of red chili, sliced
  • 2-3 pieces of green chili, sliced
  • 2-3 pieces of bay leaves
  • 1 stalk of Lemongrass, bruised
  • 400 ml of Coconut Milk
  • 1 tsp of Salt
  • 1 tsp of Sugar
  • 3 tbsp of Cooking Oil

Instructions

  1. Prepare the ingredients.
  2. Slice the tempeh and tofu into small cubes.
  3. Wash and clean the bean sprouts.
  4. Slice the red and green chili peppers.
  5. Fry the tempeh and tofu until it's golden brown, then set aside.
  6. Heat the cooking oil in a pot, then sauté the red and green chili peppers, bay leaves, and lemongrass until fragrant.
  7. Add 400 ml of coconut milk, salt, and sugar. Cook for about five minutes.
  8. Add in the fried tempeh and tofu, and cook for another five minutes.
  9. Add in the bean sprouts and cook until just wilted.
  10. Prepare lontong by cutting it into bite-sized pieces.
  11. Arrange the lontong on a plate and pour the lodeh kuah gravy over it.
  12. Voila! You've just made a delicious Lontong Basah with Lodeh Kuah.
