- 1 whole chicken (chopped to preferred size)
- 4 stalks of lemongrass (bruised)
- 4-5 pieces of kaffir lime leaves
- 3-4 pieces of galangal (sliced)
- 1 can of straw mushroom
- 4-5 pieces of bird's eye chili (sliced)
- 2 tablespoons of fish sauce
- 2 tablespoons of lime juice
- 1 tablespoon of sugar
- 1 cup of water
Instructions:
- Boil the water in a pot and add lemongrass, kaffir lime leaves, and galangal. Let it simmer for 5 minutes to release the aroma.
- Add the chicken and let it cook for 5-10 minutes.
- Add the mushroom, chili, fish sauce, lime juice, and sugar. Stir well and let it simmer for another 5 minutes.
- Remove from heat and serve hot with steamed rice.
