Instructions:

1. Mix the flour, sugar, baking powder, and salt in a large bowl.

2. In a separate bowl, beat the eggs and then add the milk, vegetable oil, and vanilla extract.

3. Pour the egg mixture into the dry ingredients and stir until well combined.

4. Heat a non-stick pan over medium heat. Pour 1/4 cup of the batter onto the pan and cook until bubbles start to appear on the surface of the pancake. Flip it over and cook for another 1-2 minutes.

5. Repeat with the remaining batter.

6. For the topping, beat the whipped cream and powdered sugar until soft peaks form. Add the vanilla extract and beat for another 10 seconds.

7. Serve the pancakes hot with a dollop of the whipped cream and fresh fruits on top.
