Hey there foodies! Today, I want to share with you all an amazing recipe that I came across recently. It's the Portuguese egg tart, but in true Malaysian style! This recipe is so delicious, it'll take you right back to the bakery shops where you would pick up these little nuggets of heaven!

Ingredients

For the tart:

  • 250g plain flour
  • 125g unsalted butter, chilled and cubed
  • 1 egg yolk
  • 1 tbsp caster sugar
  • 2 tbsp cold water
  • A pinch of salt

For the custard:

  • 4 egg yolks
  • 400ml full cream milk
  • 100g caster sugar
  • 1 tbsp cornflour
  • 1 tsp vanilla essence

Instructions

To make the tart:

  1. In a large mixing bowl, sift in the flour and add the cubed butter. Use your fingertips to rub the butter into the flour until it resembles breadcrumbs.
  2. Add in the salt and caster sugar, followed by the egg yolk and water. Mix until it comes together to form a dough.
  3. Wrap the dough in cling wrap and chill in the fridge for at least 30 minutes.
  4. Preheat your oven to 200°C. Roll out the dough on a floured surface to a thickness of about 5mm. Cut out circles (use a cookie cutter, or the rim of a glass).
  5. Gently press the circles into a muffin tin. They should come up to almost the top. Chill in the fridge while you make the custard.

To make the custard:

  1. In a large mixing bowl, whisk the egg yolks and sugar together until thick and pale.
  2. In a saucepan, heat up the milk until just below boiling point.
  3. While whisking the egg mixture constantly, pour in the hot milk slowly. Make sure to whisk quickly so that the eggs don't cook and scramble.
  4. Return the mixture to the saucepan and cook over low heat, stirring constantly, for about 5 minutes or until the mixture has thickened up. Be careful not to let it boil.
  5. Remove from heat and whisk in the cornflour and vanilla essence.
  6. Take your tart cases out of the fridge and fill them up with the custard mixture until they are about 90% full.
  7. Bake in the oven for 15 minutes or until the tops of the tarts start to brown and the custard has set.
  8. Remove from oven and allow to cool before serving.
